World Chaine Day Dinner
La Chaine des Rotisseurs, Baillaige de Victoria celebrated World Chaine Day dinner at Cinque Terre Chadstone on 26th April 2023.
Cinque Terre quietly opened in December last year, the first key tenant to open in Chadstone’s new $70 million Social Quarter precinct, which the shopping centre formally unveiled a few weeks ago.
45 members and guests attended this event.
The evening started with Bailli Daman Shrivastav acknowledgment of the country and welcoming the guests from the Penang and London Bailliage.
Well-crafted, succulent canapes were served, the seared Scallop, Watercress, Crispy Pancetta Crumbs, Cherry Balsamic Vinegar which was perfectly matched with Mandarin EVOO Ca’ del Bosco Cuvee Prestige NV Franciacorta, LOMBARDIA DOCG.
The first course Zucchini Flower, Truffle Buffalo Ricotta & Truffle sauce Grana Padano Croquette, Beef Tartare & Nduja sauce was fresh and flavorsome followed by secong stuffed Calamaro, Rocket Pesto, Crispy Leek which was paired with Benjamin Leroux Bourgogne 2015 G.D. Vajra Langhe Rosso 2012.
The second course Piemonte DOC Maccheroncini with braised Rabbit Ragu , Parmigiano Reggiano 24 month & Balsamic Demi Glacé served with Tor del Colle Sangiovese Riserva 2016, ROMAGNA DOC was a real highlight of the evening.
The main course Braised Lamb Shoulder, Vincotto Stewed Tuscan Cabbage, Soft Polenta just melt in mouth dish , well paired with Albino Rocca Barbaresco 2013, Piemonte DOCG
Heart shaped Bonet truly represented world chaine day theme “Come with the Heart” served with Caramel & Amaretti Biscuit Chateau Suduiraut Sauternes 2009, Premier Cru Classe
